Here are some of our best recipes from our very own kitchen and some of our customers.

Super Meal Bread


Ingredients:

  • 2 tablespoons yeast
  • 1 cup of warm water
  • 3 to 3 1/2 cups warm water
  • 1/3 cup honey or brown sugar
  • 1 tablespoons salt
  • 9 tablespoons oil
  • 9 cups Super Flour Blend flour 

 

Directions:

  1. In a cup combine one cup of warm water with 1/3 cup of honey or brown sugar.  Then add mixture with 2 tablespoons of yeast into a large bowl.
  2. Combine 3 to 3 1/2 cups of warm water with salt and oil.  Add 4 1/2 cups flour and yeast to mixture, stairwell while adding remaining flour.
  3. Knead dough for about 10 to 12 minutes.
  4. Preheat oven to 200 degrees F then turn off.
  5. Grease and proof baking pan and place dough in it and place in oven to allow dough to rise.
  6. Punch down dough and divide dough into three pieces.  Place each piece into greased loaf pans, poking holes in it with a knife and let rise again.
  7. Bake at 400 degrees Fahrenheit for 22-27 minutes.

Best Brownies Ever

Ingredients:

  • 1 can non-stick vegetable oil spray
  • 2 cups of avocado blended super smooth
  • 2 1/2 cups of sugar
  • 1 1/2 cups of natural unsweetened cocoa powder
  • 1 teaspoons kosher salt
  • 2 teaspoons vanilla extract
  • 4 large eggs (or vegan egg replacer)
  • 1 1/2 teaspoon baking powder
  • 1 cup Super Flour Blend flour
  • Optional: 1/2 cup chocolate chips  

 

Directions:

  1. Preheat oven to 325 degrees F.
  2. Line 8 x 16 baking pan or dish with foil or wax paper, while leaving 2 inches extra on every side to overhang.
  3. Coat the foil with non-stick spray and set aside.
  4. Blend the avocado with the dry ingredients.
  5. Whisk in the sugar, salt, cocoa, powder and baking powder constantly whisking until desired thickness is achieved.
  6. Add vanilla and eggs (or vegan egg replacer) add Super Flour Blend flour to mixture (do not over mix ).
  7. Scrape batter into baking pan and make top smooth.
  8. Place in the oven and bake for 30 to 35 minutes at 325 degrees F.
  9. When finished, remove pan from oven and transfer pan to a wire rack too cool. When cool, place brownie on cutting board and cut into desired size squares.

 

Oatmeal Cookies

Ingredients:

  • 1 cup butter or 2 cups smooth avocado
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 large eggs (or vegan replacer)
  • 1 1/2 teaspoon vanilla
  • 2 cups Super Meal or Super Flour Blend flower
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • 3 cups quick oats
  • Optional: 1 cup raisins that you soak in warm water or table wine. 

 

Directions:

  1. In a large bowl, cream together the butter or avocado with white and brown sugar
  2. Add the eggs one at a time (or vegan replacer).
  3. Stir in the vanilla and combine with the flour, baking soda, salt and cinnamon into a creamy mixture.
  4. Add the oats to cover mixture and place in the refrigerator for 1 hour.
  5. Preheat oven to 350 degrees F.
  6. Grease a cookie sheet with butter or oil or use wax paper.
  7. Remove dough from the refrigerator then cut and roll the dough out into a walnut-sized ball and then place on cookie sheet.
  8. Flatten the cookie dough with a large fork and then bake for 10 to 12 minutes in preheated oven.
  9. Remove from oven and allow cookies to cool for 5 minutes before transferring to a wire rack to allow the cooling to finish completely.
  10. For larger cookies increase the size of the dough ball. 

 

Pizza Dough (Two 14-inch Pizzas)

Ingredients:

  • 3 1/2 to 4 cups Super Flour Blend flour, add more for rolling
  • 1 tablespoon sugar
  • 1 packet dry active instant yeast
  • 2 teaspoons kosher salt
  • 2 1/2 to 3 cups warm (110 degrees F) water or milk
  • 3 1/2 tablespoons olive oil 

 

Directions:

  1. Combine Super Flour Blend flour, yeast and kosher salt into a standing mixer.
  2. While the mixer is running add the warm water and oil.
  3. Beat until the dough forms a ball.  If the dough is sticky add more flour until the dough comes together in a firm ball.
  4. Grease a large bowl and place the dough in the bowl.
  5. Cover with plastic wrap until it rises and doubles in size.
  6. Divide the dough into two sections.  Knead and then cover with plastic and let it rise again.

 

Pancakes & Waffles

Ingredients:

  • 1 large egg (or vegan replacer)
  • 1/2 cup of Super Meal Pancake & Waffle Mix
  • 1 tablespoon oil
  • 1/2 to 1 cup milk
  • Optional: Milk can be dairy or non-dairy such as coconut, almond, cashew etc.

 

Directions:

  1. Place all ingredients into mixing bowl and add pancake mix till desired thickness is achieved. Mixture should not be too runny.
  2. Heat non-stick pan or skillet to medium heat. 
  3. Pour desired amount of mixture for each pancake keeping them separate on pan or skillet surface.
  4. When small bubbles appear on the upside, flip over with a spatula and allow to cook for 1 to 2 minutes more on the other side.  More time would be needed if mixture is thick.
  • For Waffles: Add an additional tablespoon of oil and 1 egg (or vegan replacer)

    Super Meal Breakfast Porridge (Makes 4 Cups)

    Ingredients:

    • 1 cup Super Meal Breakfast Porridge
    • 6 to 8 cups milk or water or combination of both.
    • Desired amounts of Cinnamon, Nutmeg, Vanilla, Sea Salt, Almond Extract.
    • Optional:  Milk of choice can be dairy or non-dairy such as coconut, almond, cashew, etc.
    • Optional: Sweetener such as raw sugar, maple syrup, etc.

     

    Directions:

    1. Create a mixture of water and milk and season it with some cinnamon and some sea salt in a large mixing bowl.
    2. Pour 2/3 of the liquid from the mixing bowl into a large enough pot on the stove.
    3. Set stove to medium heat.
    4. Add 1 cup Super Meal Breakfast Porridge to the liquid left in the mixing bowl while stirring with a whisk.
    5. Keep whisking until lumps are dissolved and desired thickness is achieved. Additional Super Meal Breakfast Porridge can be added if desired for greater thickness.
    6. When the liquid in the pot on the stove comes to a boil, pour the Super Meal Breakfast Porridge mixture from the mixing bowl into the pot and stir for 3 to 4 minutes with a wire whisk continuously until all ingredients are uniform and lump free.
    7. Allow mixture in pot to cook.
    8. When the center of the mixture in the pot starts to bubble, allow it to cook for an additional 3 to 4 minutes.
    9. Add desired amounts of sweetener, nutmeg, cinnamon, vanilla and almond extract and season to taste.
    • Note:  Total cooking time could be 10 minutes to 1 hour depending on the size of the portion that you would like to prepare.  For larger portions 1 1/2 to 2 hours cooking time may be needed.
